Description

Delicious and healthy pumpkin muffins perfect for breakfast or a snack.


Ingredients

  • 1 cup pumpkin purée
  • 1 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your muffin tin or line it with muffin liners.
  2. In a large bowl, mix the pumpkin purée, Greek yogurt, honey, and eggs until blended.
  3. In another bowl, combine the whole wheat flour, baking powder, cinnamon, and pumpkin pie spice and whisk together.
  4. Gently fold the dry ingredients into the wet ingredients with a rubber spatula.
  5. Fill each muffin cup about two-thirds full with the batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let the muffins cool in the tin for 5 minutes before transferring to a cooling rack.
