- 1 cup granulated sugar
- 2 large fresh lemons (zested and juiced)
- ½ cup unsalted butter (melted)
- 2 large eggs
- 1 tsp baking powder
- ¼ tsp salt
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat melted butter and granulated sugar until fluffy. Add eggs one at a time, then mix in lemon juice and zest.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Pour batter into the prepared pan and bake for 20-25 minutes until golden brown. A toothpick inserted in the center should come out clean.
- Allow to cool completely before cutting into squares and dusting with powdered sugar.
Notes
- For a more intense lemon flavor, add extra lemon zest.
