A delicious and moist banana bread recipe made with ripe bananas and chocolate chips.

- 3 large ripe bananas (mashed, (1 cup))
- ½ cup coconut sugar or brown sugar
- ⅓ cup coconut oil (melted)
- 3 medium eggs (or 2 large)
- 2 teaspoons vanilla extract
- 2 cups oat flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ⅓ cup dark chocolate chips (optional or chopped walnuts)
Instructions
- Preheat oven to 350°F. Grease an 8×4-inch loaf pan with cooking spray and line with a piece of parchment paper.
- Add the 3 large ripe bananas (mashed), ½ cup coconut sugar or brown sugar, ⅓ cup coconut oil (melted), 3 medium eggs, and 2 teaspoons vanilla extract in a medium bowl. Mix well to combine. Set aside.
- In a separate bowl, mix the dry ingredients: 2 cups oat flour, 2 teaspoons baking powder, 1 teaspoon baking soda, and ¼ teaspoon salt.
- Pour the dry ingredients over the wet ingredients. Use a spatula to mix until no floury patches remain.
- Fold in the ⅓ cup dark chocolate chips, if using. Pour into the prepared loaf pan and sprinkle a few more chocolate chips on top, if you like.
- Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for 10 minutes before removing from the pan to cool completely.
Notes
- Can substitute the chocolate chips with chopped walnuts for a different flavor.
- Ensure bananas are very ripe for the best sweetness and moisture.
