Description
This refreshing rotini pasta salad is packed with colorful vegetables and a zesty ranch dressing.
Ingredients

- 8 oz rotini pasta
- 1 cup corn kernels
- 1 cup black beans, rinsed
- 1 red bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 avocado, diced
- 1/2 cup ranch dressing
- 2 tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions, then drain and rinse with cold water.
- In a large bowl, combine pasta, corn, black beans, bell pepper, red onion, and cilantro.
- In a small bowl, whisk together ranch dressing, lime juice, chili powder, and cumin.
- Pour dressing over pasta mixture and toss to coat evenly.
- Gently fold in diced avocado.
- Season with salt and pepper to taste.
- Chill for at least 30 minutes before serving.
