Description

This refreshing rotini pasta salad is packed with colorful vegetables and a zesty ranch dressing.


Ingredients

  • 8 oz rotini pasta
  • 1 cup corn kernels
  • 1 cup black beans, rinsed
  • 1 red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 avocado, diced
  • 1/2 cup ranch dressing
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions, then drain and rinse with cold water.
  2. In a large bowl, combine pasta, corn, black beans, bell pepper, red onion, and cilantro.
  3. In a small bowl, whisk together ranch dressing, lime juice, chili powder, and cumin.
  4. Pour dressing over pasta mixture and toss to coat evenly.
  5. Gently fold in diced avocado.
  6. Season with salt and pepper to taste.
  7. Chill for at least 30 minutes before serving.
