Creamy Chickpea Pasta with Chicken and Spinach

Description

A nutritious and delicious pasta dish featuring chickpea pasta, grilled chicken, and a creamy sauce.


Ingredients

Scale
  • 12 ounces chickpea pasta (or any type of high-protein pasta)
  • 16 ounces cottage cheese
  • 1/2 cup milk
  • 1/3 cup grated parmesan
  • 1/2 Tablespoon minced garlic (or 2 garlic cloves, minced)
  • 1 teaspoon salt
  • 1 teaspoon pepper (or more to taste)
  • 2 cups roughly chopped spinach
  • 1/4 cup pasta water
  • 2 cups grilled chicken
  • 1 cup roasted zucchini
  • 1 squeeze of lemon juice

Instructions

  1. Cook the pasta according to the directions on the box.
  2. In a blender, combine the cottage cheese, milk, cheese, and garlic and blend until smooth.
  3. Pour the blended sauce into a non-stick skillet and warm over low heat.
  4. Once it’s warm, add the spinach and stir until wilted while the pasta finishes cooking.
  5. Reserve 1/4 cup of the pasta water, then drain the pasta.
  6. Add the pasta water to the sauce, and then add the cooked pasta to the skillet.
  7. Turn off the heat and stir the pasta continuously in the sauce for 1-2 minutes allowing the sauce to coat the pasta and thicken. The sauce will continue to thicken as it cools.
  8. Top the pasta with more cracked black pepper and parmesan cheese. Mix in grilled chicken, roasted zucchini, a squeeze of lemon juice, and enjoy!

Notes

  • This dish is great for meal prep and can be stored in the refrigerator for a few days.
