Description

Ingredients

  • 1 cup all-purpose flour
  • 1 cup honey (preferably raw)
  • 1/2 cup mead (or apple cider)
  • 1/2 cup butter (softened)
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts (optional, for garnish)
  • 2 tablespoons honey (for drizzling)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a baking pan.
  2. In a mixing bowl, cream together the softened butter and honey until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, spices, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the mead, until fully combined.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake in the preheated oven for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
  9. Once cooled, drizzle with honey and sprinkle with chopped nuts if desired.
  10. Slice and serve the cake warm or at room temperature.

Notes

  • For a richer flavor, use raw honey.
