A delicious honey cake made with mead, perfect for any occasion.

- 1 cup all-purpose flour
- 1 cup honey (preferably raw)
- 1/2 cup mead (or apple cider)
- 1/2 cup butter (softened)
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/4 cup chopped nuts (optional, for garnish)
- 2 tablespoons honey (for drizzling)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a baking pan.
- In a mixing bowl, cream together the softened butter and honey until smooth.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, spices, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the mead, until fully combined.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake in the preheated oven for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
- Once cooled, drizzle with honey and sprinkle with chopped nuts if desired.
- Slice and serve the cake warm or at room temperature.
Notes
- For a richer flavor, use raw honey.
- The optional nuts can add a nice crunch on top.
