- Dissolve the coffee by dissolving the instant coffee in warm water. You want a smooth coffee paste that will blend seamlessly into the dough. This step is small but essential—it ensures even distribution of flavor throughout your cookies.
- Cream butter and sugar in a large bowl, beat the softened butter and granulated sugar until the mixture is pale and fluffy. This will take 2–3 minutes. It’s the base of your cookie’s tender texture.
- Add egg and flavorings like egg, vanilla extract, and the dissolved coffee mixture. Blend until everything is fully incorporated.
- Combine the dry ingredients in a separate bowl, whisk together flour, baking powder, and salt. Gradually add this to the wet mixture, stirring just until the dough comes together. Don’t overmix—you want soft cookies, not tough ones.
