Description

A delicious and easy chicken salad recipe made with rotisserie chicken, mayo, and cranberries.


Ingredients

Scale
  • 2 cups chopped rotisserie chicken
  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 1/2 cup celery, sliced thin
  • 1/4 cup scallions, sliced thin
  • 1 tsp garlic powder
  • 1/2 cup sliced almonds
  • 1/2 cup all-natural dried cranberries or cherries

Instructions

  1. If you have a whole Rotisserie Chicken, remove the meat from the chicken and chop it into small pieces. A food processor works great for this; just pulse for a count of 5.
  2. If you have baked chicken breasts, use about 2 cups of it chopped, either by hand or in your food processor.
  3. Add all the other ingredients: mayo, sour cream, celery, scallions, garlic powder, sliced almonds, and cranberries (or cherries), and mix well.
