A delicious and easy chicken salad recipe made with rotisserie chicken, mayo, and cranberries.
Ingredients

- 2 cups chopped rotisserie chicken
- 1/2 cup mayo
- 1/2 cup sour cream
- 1/2 cup celery, sliced thin
- 1/4 cup scallions, sliced thin
- 1 tsp garlic powder
- 1/2 cup sliced almonds
- 1/2 cup all-natural dried cranberries or cherries
Instructions
- If you have a whole Rotisserie Chicken, remove the meat from the chicken and chop it into small pieces. A food processor works great for this; just pulse for a count of 5.
- If you have baked chicken breasts, use about 2 cups of it chopped, either by hand or in your food processor.
- Add all the other ingredients: mayo, sour cream, celery, scallions, garlic powder, sliced almonds, and cranberries (or cherries), and mix well.

- Serve on bread, in a wrap, or over a bed of greens for a refreshing meal.
