A delicious Cajun shrimp and sausage dish served over pappardelle pasta, creamy and full of flavor!

Ingredients

Scale
  • 8 oz pappardelle pasta
  • 8 oz shrimp, peeled and deveined
  • 6 oz Andouille sausage, sliced
  • 1 small red bell pepper, diced
  • 1 small yellow bell pepper, diced
  • 1 small green bell pepper, diced
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tsp Cajun seasoning (or more to taste)
  • 1/2 cup grated parmesan cheese
  • 2 tbsp chopped parsley (for garnish)
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water. Cook pappardelle until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add sliced Andouille sausage and cook until browned. Remove and set aside.
  3. Add 1 tbsp butter to the same skillet. Add shrimp seasoned with Cajun seasoning. Cook for 1–2 minutes per side. Remove and set aside.
  4. Add remaining butter if needed. Sauté onion and all three bell peppers until softened. Add garlic and stir for 1 minute.
  5. Pour in chicken broth to deglaze. Stir in heavy cream, remaining Cajun seasoning, and parmesan. Simmer until slightly thickened.
  6. Return shrimp and sausage to the skillet. Add the pasta and toss to coat everything in sauce. Simmer for 2 minutes on low.
  7. Plate and garnish with parsley and extra parmesan if desired. Serve hot.
