Description

A delicious and creamy salmon penne pasta dish that’s perfect for dinner.


Ingredients

  • 8 oz penne pasta
  • 1 lb skinless fresh salmon fillet
  • 8 oz cream cheese
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup grated Parmesan cheese
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or butter.
  2. Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
  3. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant. Add spinach and cook until wilted. Remove from heat.
  4. In a large bowl, mix cream cheese, heavy cream, lemon juice, salt, pepper, and half the Parmesan until smooth. Gently fold in the cooked pasta, sautéed spinach, and flaked salmon.
  5. Transfer the mixture to the prepared baking dish. Top with remaining Parmesan cheese. Bake for 25-30 minutes until golden brown and bubbling.
  6. Let cool for 5 minutes before serving.
