A delicious and creamy salmon penne pasta dish that’s perfect for dinner.

- 8 oz penne pasta
- 1 lb skinless fresh salmon fillet
- 8 oz cream cheese
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 cup grated Parmesan cheese
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or butter.
- Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
- In a skillet over medium heat, sauté minced garlic in olive oil until fragrant. Add spinach and cook until wilted. Remove from heat.
- In a large bowl, mix cream cheese, heavy cream, lemon juice, salt, pepper, and half the Parmesan until smooth. Gently fold in the cooked pasta, sautéed spinach, and flaked salmon.
- Transfer the mixture to the prepared baking dish. Top with remaining Parmesan cheese. Bake for 25-30 minutes until golden brown and bubbling.
- Let cool for 5 minutes before serving.
Notes
- This dish pairs well with a crisp green salad.
- Feel free to substitute the salmon with another fish, if preferred.
