Description
Delicious and crispy gluten-free bhajis made with gram flour and spices.
Ingredients

- 130 g Gram Flour (Besan)
- 1 tbsp Cornflour (Cornstarch)
- ½ tsp Bicarbonate of Soda
- 135 ml Water
- 2 large Onions (Thinly sliced)
- 1 tbsp Ginger (Minced)
- 1 Green Chilli (Finely chopped)
- 1 tbsp Fresh Coriander (Cilantro) (Chopped, for garnish)
- 1 tsp Ground Cumin
- 1 tsp Ground Coriander
- 1 tbsp Dried Coriander Leaf
- 1 tsp Chilli Flakes
- 1 tsp Ground Fenugreek
- ¾ tsp Salt
- ½ tsp Garlic Salt
- Vegetable Oil (Fill pan to a depth of about 3 inches)
- Dipping Sauce (Sweet and sour or sweet chili sauce)
Instructions
- Pour vegetable oil into a wok or heavy pan until it’s about 3 inches deep. Heat over medium until it reaches 180°C (350°F);
- In a large bowl, combine the sliced onions, minced ginger, chopped green chilli, and all the dry ingredients. Mix until the onions are fully coated.
- Gradually add the water to the onion mixture while stirring gently until a thick batter coats the onions evenly.
- Drop a small spoonful of the batter into the hot oil. If it sizzles and rises to the surface, your oil is ready.
- Form small balls from the mixture and carefully add 4-5 per batch into the hot oil. Fry for about 3-4 minutes until golden brown.
- Use a slotted spoon to remove the bhajis, letting them drain on kitchen paper. Garnish with chopped fresh coriander.
Notes
- Adjust the amount of green chili based on your spice preference.
- Ensure the oil is hot enough to prevent bhajis from absorbing too much oil.
- Can be served with various dipping sauces for added flavor.
