- 2 cups long-grain white rice (uncooked)
- 3 cups chicken or vegetable broth
- 2 cups frozen mixed vegetables
- 3 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp neutral oil
- 2 cloves garlic (minced)
- 2 eggs (large)
- 1 cup cooked protein (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Add uncooked rice, broth, soy sauce, sesame oil, and neutral oil to the dish. Stir gently.
- Sprinkle vegetables and garlic evenly over the rice.
- Cover tightly with foil and bake for 35 minutes.
- Remove foil, stir rice, and add eggs and cooked protein.
- Bake uncovered for 10–15 minutes until eggs are cooked.
- Fluff, garnish, and serve hot.
Notes
- This dish is versatile; feel free to customize with your favorite vegetables or proteins.
- For added flavor, you can also include green onions or a dash of hot sauce when serving.
