Description

A healthy and delicious pasta dish featuring whole wheat pasta, broccoli, garlic, and a hint of red pepper flakes.


Ingredients

Scale
  • 8 ounces whole wheat pasta
  • 2 cups broccoli florets
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped walnuts
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions in salted boiling water. Add broccoli florets during the last 3 minutes of cooking.
  2. Drain pasta and broccoli, reserving 1/2 cup (120ml) of pasta water.
  3. In a large pan, heat olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  4. Add cooked pasta and broccoli to the pan. Toss to combine with garlic oil.
  5. Stir in Parmesan cheese, walnuts, and red pepper flakes. Add reserved pasta water as needed to create a creamy sauce.
  6. Season with salt and black pepper to taste. Serve immediately.

Notes

  • This dish is best served fresh but can be stored in an airtight container in the refrigerator for up to 3 days.
  • Feel free to substitute other vegetables or nuts as desired.
