Ingredients

- 2 large eggs
- 1 teaspoon butter or olive oil
- Pinch salt
- Pinch black pepper
- 1 teaspoon chopped fresh herbs (e.g., parsley, chives)
- 1 tablespoon shredded cheese (optional)
- 1 tablespoon chopped spinach (optional)
- 1 tablespoon diced tomatoes (optional)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease two ramekins with butter or olive oil.
- Crack one egg into each ramekin, taking care not to break the yolks.
- Season each with a pinch of salt, pepper, and fresh herbs.
- Place ramekins on a baking tray and pour hot water into the tray until it reaches halfway up the ramekins.
- Bake for 12–15 minutes, depending on your preferred yolk texture.
- Remove from oven carefully using oven mitts. Let cool slightly before serving.
