Description
A creamy hummus made with hurda and spices, perfect as a dip or spread.
Ingredients
Scale
- 1 cup ready to eat hurda (green jowar kernels)
- 3–4 cloves garlic (peeled)
- 2 tablespoons tahini paste
- 5 tablespoons extra virgin olive oil
- 2 tablespoons freshly squeezed lime juice
- ½ teaspoon salt (or to taste)
- ½ teaspoon cumin powder
- ½ teaspoon red pepper flakes
- 2–3 tablespoons ice-cold water
Instructions
- Add all the ingredients to a blender and blend to make a smooth hummus.
- Blend to make smooth hummus. Scrap the sides of the blender a few times while blending.
- Add some more water if the hummus is too thick. The consistency should be creamy and mashed potatoes-like.
- Check for salt and add more if required and blend again.
- Transfer the hummus to a serving bowl and garnish with a drizzle of extra virgin olive oil, some red pepper flakes, and hurda.
- Serve chilled or at room temperature.

- Adjust the water based on your desired consistency.
- Great for serving with pita or fresh vegetables.
