Description

A creamy hummus made with hurda and spices, perfect as a dip or spread.


Ingredients

Scale
  • 1 cup ready to eat hurda (green jowar kernels)
  • 34 cloves garlic (peeled)
  • 2 tablespoons tahini paste
  • 5 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lime juice
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon cumin powder
  • ½ teaspoon red pepper flakes
  • 23 tablespoons ice-cold water

Instructions

  1. Add all the ingredients to a blender and blend to make a smooth hummus.
  2. Blend to make smooth hummus. Scrap the sides of the blender a few times while blending.
  3. Add some more water if the hummus is too thick. The consistency should be creamy and mashed potatoes-like.
  4. Check for salt and add more if required and blend again.
  5. Transfer the hummus to a serving bowl and garnish with a drizzle of extra virgin olive oil, some red pepper flakes, and hurda.
  6. Serve chilled or at room temperature.
