- 2 ripe mangoes, diced
- 1 cup full-fat coconut milk
- 2 tbsp unflavored gelatin powder
- 3 tbsp honey or maple syrup (adjust to taste)
- 1 tsp vanilla extract
Instructions
- Bloom the gelatin: In a small bowl, mix the gelatin powder with 1/4 cup cold water and let it sit for about five minutes until spongy.
- Blend the mangoes: In a blender, combine diced mangoes, coconut milk, and honey or maple syrup. Blend until smooth.
- Heat the mixture: Pour the blended mixture into a saucepan over medium heat. Stir occasionally until warm but not boiling (about three minutes).
- Incorporate the gelatin: Remove from heat and stir in the bloomed gelatin until dissolved. Add vanilla extract and blend briefly.
- Chill: Pour into serving cups and cover with plastic wrap. Refrigerate for at least two hours until set.
- Serve: Top with diced fresh mango or shredded coconut before enjoying.
Notes
- Adjust sweetness by increasing or decreasing honey or maple syrup based on your preference.
- For a fancier presentation, add a mint leaf on top when serving.
