- 9 oz fresh cheese ravioli
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ¼ cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- Prepare all ingredients by chopping garlic and halving cherry tomatoes.
- In a large skillet over medium heat, add olive oil. Sauté minced garlic until fragrant, then add cherry tomatoes and cook until they soften.
- Add fresh spinach to the skillet and stir until wilted (about 2 minutes).
- Pour in heavy cream, stirring continuously until combined. Allow it to simmer and thicken slightly.
- In another pot, boil salted water and cook ravioli according to package instructions (usually about 3-5 minutes).
- Drain the ravioli and gently toss them in the skillet with the cream sauce until evenly coated.
- Serve hot, topped with grated Parmesan cheese and chopped basil.
