Description

Delicious chicken thighs marinated in a sweet and tangy pomegranate glaze, roasted to perfection.


Ingredients

  • 4 bone-in, skin-on chicken thighs (about 2 lbs)
  • 1 cup pomegranate juice (100% pure)
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, finely chopped
  • Salt and pepper to taste
  • 1 tsp olive oil (for sautéing)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Pat the chicken thighs dry and season generously with salt and pepper.
  3. In a bowl, whisk together pomegranate juice, balsamic vinegar, honey, garlic, and rosemary to create the glaze.
  4. Marinate the seasoned chicken in the glaze for at least one hour (overnight for best results).
  5. Place marinated chicken in the baking dish skin-side up and pour any leftover marinade over them.
  6. Roast in the oven for 35-40 minutes until cooked through and golden brown.
  7. Serve hot drizzled with additional glaze from the pan.
