Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the diced onion, bell pepper, and celery to the skillet. Sauté for about 5 minutes until the vegetables are soft.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Sprinkle the Cajun seasoning, salt, and pepper into the skillet. Mix well to coat the vegetables.

  8. While the rice is cooking, remove the lid and gently stir in the shrimp. Cook uncovered for an additional 5 minutes or until the shrimp turn pink and opaque.
  9. After the shrimp are cooked, remove the skillet from the heat and let it sit for 5 minutes before fluffing the rice with a fork.
  10. Top with chopped green onions for added flavor and serve immediately.
