- 1 pound shrimp, peeled and deveined
- 1 cup long-grain white rice
- 2 cups broth (chicken or vegetable)
- 1 medium onion, diced
- 1 bell pepper (green or red), diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 teaspoon salt (to taste)
- ½ teaspoon black pepper (to taste)
- 1 cup green onions, chopped for garnish
- Optional: hot sauce for serving
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the diced onion, bell pepper, and celery to the skillet. Sauté for about 5 minutes until the vegetables are soft.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Sprinkle the Cajun seasoning, salt, and pepper into the skillet. Mix well to coat the vegetables.
- Stir in the uncooked rice, ensuring it gets mixed with the vegetables and seasoning.
- Add the broth to the skillet and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the rice is fully cooked and has absorbed the liquid.
- While the rice is cooking, remove the lid and gently stir in the shrimp. Cook uncovered for an additional 5 minutes or until the shrimp turn pink and opaque.
- After the shrimp are cooked, remove the skillet from the heat and let it sit for 5 minutes before fluffing the rice with a fork.
- Top with chopped green onions for added flavor and serve immediately.
