Cheesy Chicken Tortilla

Description

A delicious cheesy chicken tortilla recipe with a spicy sauce.


Ingredients

Scale
  • 1/4 cup mayonnaise
  • 2 teaspoons minced pickled jalapeños
  • 2 teaspoons pickled jalapeño juice
  • 3/4 teaspoon sugar
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon garlic powder
  • 1 to 2 tablespoons cooking spray
  • 2/3 cup cheese
  • 1/3 cup chicken
  • 2 tortilla shells

Instructions

  1. In a small bowl whisk together the ingredients for the sauce.
  2. Place a large skillet that you can fit with a lid over very low heat.
  3. Add 1 to 2 tablespoons of the sauce to a tortilla shell.
  4. Spray the skillet with a very small amount of cooking spray.
  5. Place the tortilla (that has been prepared with the sauce) in the skillet.
  6. Add about 2/3 cup of cheese, 1/3 cup of chicken, and a little more cheese.
  7. Top with a second tortilla shell.
  8. Let it cook for about two minutes or until the shell begins to turn golden brown. Cover while it is cooking.
  9. Flip it over, recover, and cook for another two minutes.
  10. Repeat with the other prepared tortillas.
  11. Slice with a pizza cutter and enjoy.

Notes

  • Feel free to adjust the spice level by adding more or less jalapeños.
  • For a vegetarian option, substitute chicken with more cheese or vegetables.
